Tenuta
Villa Gaia is located on the valley overlooking the small town
of Seggiano (GR), at 490 meters above the sea level, and is
famous for the production of extra-virgin olive oil. Among the
geographic characteristics present in this area, there are
medium-sized hills and a rigid climate that does not allow the
development of parasites that cause olives to have a harsh
flavor. The soil is clayey, permeable and rich in minerals,
giving the olive oil an excellent flavor and a fruity aroma.
The production of
“Cultivar” extra-virgin olive oil, which is autochthonous to
Amiata, results in the only purestand Tuscan oil. Harvesting
takes place using the hand picking method in the month of
November, which is the ideal ripening period. The olives are
then taken to the mill to be processed. During the chemical
analysis, the oil will reveal acidity levels lower than 0.13%
and a bright color with an intense aroma, similar to fresh cut
grass, wild artichokes and a fruity aftertaste with a delicate
scent of almonds. The local municipality is waiting on the
Protected Designation of Origin (PDO) recognition to protect the
quality of the product, and thus guarantee its authenticity.

The high quality of
the “Tenuta Villa Gaia” extra-virgin olive oil is the result of
a complex series of factors such as: the uniqueness of its
homeland, its particular climate, the geological composition of
the land, the extreme care in the selection of the original
cultivar olives, the cultural and agronomic techniques that will
render the harvest of high quality olives. The cultivar olive
variety of Seggiano sets the difference in taste, quality and
tradition of our extra-virgin olive oil. The valley overlooking
mount Amiata in southern Tuscany is surely an ideal place for
this process. This is due to the climate and the correct sun
exposure necessary for the growth of the specific “moraiolo”
olive tree variety. The harvesting process, its transformation
and its bottling are made in a clean environment, away from
odors, light and excessive heat or cold—factors that threaten to
damage its original properties. In this manner, the maximum
amount of sensorial richness and nutrition from the oil can be
extracted. |
